  • ½ cup whole milk
  • ¼ cup Greek yogurt, plain full-fat
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon honey
  • ⅛ teaspoon kosher salt

    Pour 0.5 cup of rolled oats into a mason jar or airtight container. The oats should fill the jar roughly one-third of the way.

    Pour in 0.5 cup of whole milk and 0.25 cup of Greek yogurt — the yogurt adds creaminess and protein so the oats thicken properly overnight instead of turning soupy.

    Add 0.5 teaspoon of pure vanilla extract, 1 tablespoon of honey for sweetness, and a pinch of kosher salt (0.125 teaspoon) to balance the flavors.

    Stir everything together until well combined — you're looking for a wet, uniform mixture with no dry oat pockets. Scrape down the sides with a spoon.

    Cover the jar or container tightly and refrigerate overnight, or for at least 6 hours. The oats will absorb the liquid and soften as they sit.

    In the morning, open the jar and give the oats a good stir. If they feel too thick, add a splash of milk (1 tablespoon at a time) until you reach your preferred consistency — some people like it spoonable, others prefer it pourable.
