Ingredients

  • 2 pieces (about 6 oz each) chicken breasts, boneless skinless
  • 2 cups fresh spinach
  • ¼ cup sun-dried tomatoes in oil
  • 3 oz fresh mozzarella or mozzarella cheese, sliced
  • 3 cloves garlic, minced
  • ½ cup dry white wine or chicken broth

Instructions

    Pat chicken dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Sear chicken 5 minutes per side without moving until golden brown. Transfer to a plate.

    Add garlic to the skillet, stir for 30 seconds until fragrant, then add wine and sun-dried tomatoes.

    Return chicken to the pan, top with spinach and mozzarella, cover, and cook for 3 minutes until cheese melts.

    Divide between two plates. Spoon pan sauce over the top and serve immediately.
