Ingredients
- 2 pieces (about 6 oz each) chicken breasts, boneless skinless
- 2 cups fresh spinach
- ¼ cup sun-dried tomatoes in oil
- 3 oz fresh mozzarella or mozzarella cheese, sliced
- 3 cloves garlic, minced
- ½ cup dry white wine or chicken broth

Pat chicken dry with paper towels. Season generously with salt and black pepper on both sides.
