Ingredients

  • 1 pound shredded wheat (kadayıf)
  • ½ cup butter, melted
  • 2 cups milk
  • ½ cup semolina
  • 1 cup sugar
  • 1 cup heavy cream
  • ¼ cup pistachios, ground

Instructions

  1. 1

In a saucepan, combine 2 cups milk, 1 cup sugar, and 0.5 cup semolina. Cook over medium heat, stirring constantly, until thickened and bubbling, about 10 minutes.

  2. 2

Remove from heat and stir in 1 cup heavy cream. Let cool completely; the filling will thicken further as it cools.

  3. 3

Preheat oven to 350°F. Gently separate the shredded wheat strands and spread them on a work surface. Brush with 0.5 cup melted butter.

  4. 4

Divide the shredded wheat into 8 portions. Place a spoonful of filling along one edge of each portion, then roll up tightly into a log shape.

  5. 5

Place rolls seam-side down in a baking dish. Bake until golden and crisp, about 25-30 minutes.

  6. 6

Let cool for 10 minutes, then dust generously with ground pistachios before serving.
