Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 1 cup red lentils
- 4 cups vegetable broth
- 1 whole lemon (juiced)
- 1 pinch salt and pepper to taste

Heat oil in a large pot over medium. Add diced onion and cook, stirring occasionally, until soft, ~5 minutes.

Add red lentils and broth. Bring to a boil, then reduce heat and simmer until lentils are completely soft, ~12 minutes.

Blend soup with an immersion blender until smooth and creamy. Work in batches if using a countertop blender.

Squeeze in lemon juice. Season with salt and pepper to taste.
