Turkish Red Lentil Soup

Ingredients

  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • ½ medium onion, halved
  • 3 tbsp olive oil
  • ½ tsp cumin
  • ½ whole lemon (juiced)

Instructions

    Combine lentils, broth, and onion halves in a pot. Bring to a boil over high heat.

    Reduce heat and simmer uncovered until lentils break down and soup is silky, 15 minutes.

    Remove and discard onion. Stir in lemon juice and salt to taste.

    Heat olive oil in a small skillet over medium. Add cumin and cook until fragrant, 45 seconds.
