Ingredients

  • 2 cans (15 oz each) canned white beans, drained and rinsed
  • ½ medium red onion
  • 1 whole lemon
  • 3 tbsp olive oil
  • ¼ cup fresh parsley, chopped
  • 1 pinch salt and black pepper to taste

Instructions

    Slice red onion into thin half-moons. Place in a small bowl and cover with cold water.

    Juice the lemon into a large bowl. Whisk in olive oil, salt, and black pepper.

    Add drained beans to the dressing bowl. Stir gently to coat.

    Drain the red onion thoroughly. Add to the beans along with fresh parsley.
