Ingredients
- 1 lb ground beef
- ½ medium onion, finely minced
- ¼ cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- ¼ cup breadcrumbs
- 1 large egg
- 1 tsp ground cumin
- ½ tsp ground coriander
- ¼ tsp cayenne pepper
- ¾ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- ½ cup Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 unit fresh lemon wedges
- 2 tbsp fresh herbs for garnish

In a large bowl, combine ground beef, minced onion, parsley, mint, breadcrumbs, egg, cumin, coriander, cayenne, salt, and black pepper.

Mix gently with your hands until just combined—do not overwork the meat.

Divide mixture into 12 equal portions and shape each into an oblong log about 3 inches long.

In a small bowl, whisk together yogurt, lemon juice, and minced garlic for the sauce. Season with salt and pepper to taste.

Heat olive oil in a 12-inch skillet over medium-high heat until shimmering.

Working in batches to avoid crowding, add kofte and cook for 3-4 minutes per side until browned and cooked through (internal temperature 160°F).
