Ingredients
- 8 sheets phyllo dough
- 1 cup mixed nuts (e.g., walnuts, pistachios), chopped
- ½ cup butter, melted
- 1 cup sugar
- ½ cup water
- 1 tbsp lemon juice

Preheat oven to 350°F. In a small saucepan, combine 1 cup sugar, 1/2 cup water, and 1 tbsp lemon juice. Bring to a boil, then simmer for 5 minutes until slightly thickened. Set aside to cool.

Lay one sheet of phyllo on a clean surface. Brush lightly with melted butter. Sprinkle about 2 tbsp of chopped nuts along one short edge.

Roll the phyllo tightly around the nuts, tucking in the ends as you go. Place seam-side down on a baking sheet. Repeat with remaining sheets and nuts.

Brush the tops of the rolls with remaining butter. Bake for 15-20 minutes, until golden and crisp.

Pour the cooled syrup over the hot rolls. Let them absorb the syrup for 10 minutes before serving.
