Tuna with Bell Peppers and Basil

A quick weeknight skillet dinner featuring seared tuna steaks and sweet bell peppers, finished with fresh basil. Simple, colorful, and ready in about 30 minutes.

Ingredients

  • 1.5 lb tuna steaks
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 3 tbsp olive oil
  • 2 cloves garlic
  • ½ cup basil leaves
  • ½ tsp salt
  • ¼ tsp black pepper

    Pat the 1.5 lb tuna steaks dry and season both sides with the 0.5 tsp salt and 0.25 tsp black pepper. Set aside while you prep the vegetables.

    Slice the 1 red and 1 yellow bell pepper into thin strips. Mince the 2 garlic cloves.

    Heat 2 tbsp of the olive oil in a large skillet over medium-high. Add the bell peppers and cook, stirring occasionally, until softened and lightly charred, about 8 minutes. Add the garlic and cook until fragrant, 1 minute more. Transfer to a plate.

    Add the remaining 1 tbsp olive oil to the skillet. Increase heat to high. Place the tuna in the skillet and sear until browned on the outside but still pink in the center, about 2 minutes per side for medium-rare.

    Return the peppers to the skillet with the tuna. Remove from heat and scatter the 0.5 cup basil leaves over the top. Serve immediately, spooning peppers over the tuna.
