Travesseiro (Portuguese Custard Pastry)

Crispy phyllo pastries filled with sweet custard cream and dusted with cinnamon sugar. A classic Portuguese dessert that's easier than it looks.

Ingredients

  • 1 cup whole milk
  • 3 count egg yolks
  • ¼ cup sugar
  • 2 tbsp cornstarch
  • ½ tsp vanilla extract
  • 8 sheets phyllo sheets
  • ½ cup butter, melted
  • 3 tbsp cinnamon and sugar mixture

Instructions

    Whisk egg yolks with sugar until pale, about 2 minutes.

    Mix cornstarch into the yolk mixture until no lumps remain.

    Heat milk in a saucepan over medium until steaming, 4–5 minutes.

    Slowly pour hot milk into yolk mixture while whisking constantly.

    Transfer mixture back to saucepan and cook over medium, stirring, until thick, 3–4 minutes.

    Stir in vanilla. Pour custard onto a plate and refrigerate 15 minutes.

    Preheat oven to 400°F. Line a baking sheet with parchment paper.

    Lay one phyllo sheet on work surface. Brush lightly with melted butter.

    Spoon 2 tbsp custard along the bottom third of the phyllo sheet.

    Fold the bottom edge over filling, then roll up tightly like an envelope.

    Place seam-side down on baking sheet. Repeat with remaining phyllo and custard.

    Brush each pastry with remaining butter.

    Bake until golden brown and crispy, 12–15 minutes.

    Remove from oven and dust generously with cinnamon sugar while warm.

    Serve within 30 minutes while pastries are still crispy.
