Ingredients

  • 8 oz pork shoulder, thinly sliced (or quick-cook pork strips)
  • 2.5 tbsp white miso paste
  • 4 cups chicken or vegetable broth
  • 6 oz fresh ramen noodles (or dried)
  • 2 whole eggs
  • 2 stalks scallions, sliced

Instructions

    Bring broth to a simmer in a large pot over medium-high heat, about 2 minutes.

    Add sliced pork, stirring to break up clumps, until no pink remains, ~3 minutes.

    Whisk miso into a small bowl with a splash of hot broth, then stir back into the pot.
