Ingredients
- 1 loaf baguette
- 2 cups cherry tomatoes
- 8 oz fresh mozzarella
- ¼ cup fresh basil
- 1 clove garlic
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- ½ tsp salt

Preheat your oven to 400°F. Slice the baguette diagonally into 1/2-inch thick slices and arrange them on a baking sheet.

Brush both sides of each bread slice with 2 tbsp of the olive oil. Toast in the oven for 5-7 minutes, flipping once, until golden and crisp.

While the bread toasts, halve the cherry tomatoes and place them in a bowl. Tear the mozzarella into bite-sized pieces and add to the bowl.

Chiffonade the basil leaves and add to the bowl. Mince the garlic clove and add it along with the remaining 1 tbsp olive oil, balsamic vinegar, and salt. Toss gently to combine.

Rub the toasted bread slices with the cut side of the garlic clove for extra flavor (optional).

Spoon the tomato-mozzarella mixture generously over each toast. Serve immediately, drizzled with a little extra olive oil if desired.
