Ingredients
- 14 oz firm tofu, pressed
- 1 whole avocado
- 3 cups mixed greens (arugula, spinach, or lettuce)
- 3 tbsp sesame oil
- 1.5 tbsp rice vinegar
- ½ tbsp fresh ginger, minced

Cut pressed tofu into 0.5-inch cubes. Pat dry with a clean kitchen towel.

Whisk together sesame oil, rice vinegar, and minced ginger in a small bowl.

Heat 1 tbsp sesame oil in a large skillet over medium-high until shimmering.

Add tofu cubes and cook without stirring for 3 minutes until golden on bottom.
