Ingredients

  • 14 oz firm tofu, pressed
  • 1 whole avocado
  • 3 cups mixed greens (arugula, spinach, or lettuce)
  • 3 tbsp sesame oil
  • 1.5 tbsp rice vinegar
  • ½ tbsp fresh ginger, minced

Instructions

    Cut pressed tofu into 0.5-inch cubes. Pat dry with a clean kitchen towel.

    Whisk together sesame oil, rice vinegar, and minced ginger in a small bowl.

    Heat 1 tbsp sesame oil in a large skillet over medium-high until shimmering.

    Add tofu cubes and cook without stirring for 3 minutes until golden on bottom.

    Stir gently and cook another 2 minutes until edges are crispy. Transfer to a plate.

    Slice avocado in half, remove the pit, and slice into thin wedges.

    Divide greens between two bowls. Top with tofu and avocado slices.
