Ingredients
- 6 oz elbow pasta
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1.5 cups whole milk
- 1 cup sharp cheddar, shredded
- ½ cup gruyère, shredded
- 1 pinch salt and black pepper to taste

Boil salted water in a large pot. Add pasta and cook until al dente, ~7 minutes.

Drain pasta, reserving 1/2 cup pasta water. Set pasta aside.

In the same pot, melt butter over medium heat. Add flour and stir for 60 seconds until smooth.

Pour in milk slowly, whisking constantly to prevent lumps, ~2 minutes until smooth.

Heat until steam rises and sauce thickens, stirring occasionally, ~4 minutes.

Remove from heat. Stir in cheddar and gruyère until fully melted and glossy.

Add cooked pasta and reserved pasta water. Stir until creamy; season with salt and pepper.
