Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 3 tbsp soy sauce
  • 3 tbsp rice vinegar
  • 3 tbsp sesame oil
  • 4 whole garlic cloves, sliced
  • 1 tbsp fresh ginger, sliced into matchsticks
  • ½ cup fresh basil or Thai basil, roughly chopped

Instructions

    Cut chicken thighs into 1.5-inch chunks. Pat dry with paper towels.

    Heat sesame oil in a large skillet over medium-high until shimmering, about 1 minute.

    Add chicken and sear 2 minutes per side without stirring until golden edges form.

    Stir in garlic and ginger, cook 30 seconds until fragrant, then add soy sauce and vinegar.

    Simmer 8–10 minutes, stirring occasionally, until chicken is cooked through and sauce coats.

    Remove from heat, fold in basil, and serve immediately over rice if desired.
