Ingredients
- 12 oz pork tenderloin
- 2 whole Thai bird's eye chili
- 4 whole garlic cloves, minced
- 1 whole shallot, sliced
- 1 cup fresh Thai basil
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp palm sugar or brown sugar
- 2 tbsp vegetable oil
- 1 cup jasmine rice, cooked

Slice pork tenderloin against the grain into 0.25-inch thick pieces. Pat dry with paper towels.

Mince garlic, slice shallot, and finely chop Thai chilies. Whisk together fish sauce, soy sauce, and palm sugar in a small bowl.

Heat 1 tbsp oil in a 12-inch wok or skillet over high heat until smoking. Add pork in a single layer and sear 2 minutes per side until golden. Transfer to a plate.

Add remaining 1 tbsp oil to the wok. Add garlic, shallot, and chili; stir-fry for 1 minute until fragrant.

Return pork to the wok, pour in sauce, and toss constantly for 1-2 minutes until the pork is coated and cooked through.
