Ingredients

  • 3 tbsp creamy peanut butter
  • 2 tbsp fresh lime juice
  • 1.5 tbsp soy sauce
  • ½ tbsp fresh ginger, minced
  • 3 tbsp warm water
  • 14 oz firm tofu, pressed and cubed
  • 6 oz rice noodles (or ramen)
  • ¼ cup roasted peanuts, crushed
  • 1 whole lime

Instructions

    Whisk peanut butter, lime juice, soy sauce, ginger, and warm water in a bowl until smooth.

    Cook rice noodles in salted boiling water until tender, about 4 minutes. Drain and set aside.

    Heat 2 tbsp oil in a large skillet over medium-high heat until it shimmers.

    Add tofu cubes and pan-fry 3 minutes per side until golden brown and crispy.

    Toss cooked noodles with peanut sauce until evenly coated. Top with crispy tofu and crushed peanuts.
