Ingredients
- 3 tbsp creamy peanut butter
- 2 tbsp fresh lime juice
- 1.5 tbsp soy sauce
- ½ tbsp fresh ginger, minced
- 3 tbsp warm water
- 14 oz firm tofu, pressed and cubed
- 6 oz rice noodles (or ramen)
- ¼ cup roasted peanuts, crushed
- 1 whole lime

Whisk peanut butter, lime juice, soy sauce, ginger, and warm water in a bowl until smooth.

Cook rice noodles in salted boiling water until tender, about 4 minutes. Drain and set aside.
