Ingredients

  • 1.5 lbs chicken breast
  • ½ cup coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 2 tbsp lime juice
  • 3 cloves garlic cloves, minced
  • 1 tbsp ginger, minced
  • ¾ cup peanut butter
  • ½ cup coconut milk
  • 1 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • ½ tsp red chili flakes
  • 1 whole cucumber, sliced
  • ¼ cup fresh cilantro
  • 2 whole lime wedges

Instructions

    Soak wooden skewers in water for 30 minutes to prevent burning.

    Cut chicken breasts into 1-inch thick strips and thread onto skewers.

    Combine coconut milk, red curry paste, fish sauce, lime juice, garlic, and ginger in a bowl.

    Place skewered chicken in a shallow dish and pour marinade over, coating evenly. Refrigerate for at least 30 minutes.

    Heat a grill or grill pan over medium-high heat. Brush with oil to prevent sticking.

    Grill skewers for 6-8 minutes per side until chicken is cooked through and has light char marks.
