- 1 tbsp fish sauce
- 2 tbsp lime juice
- 3 cloves garlic cloves, minced
- 1 tbsp ginger, minced
- ¾ cup peanut butter
- ½ cup coconut milk
- 1 tbsp lime juice

- 1 tbsp brown sugar
- ½ tsp red chili flakes
- 1 whole cucumber, sliced
- ¼ cup fresh cilantro
- 2 whole lime wedges

Soak wooden skewers in water for 30 minutes to prevent burning.

Cut chicken breasts into 1-inch thick strips and thread onto skewers.
