Ingredients
- 4 cups beef broth
- 8 oz beef chuck, thinly sliced
- 2 tbsp Thai red curry paste
- 2 tbsp fish sauce
- 1 tbsp palm sugar or brown sugar
- 2 whole lemongrass stalks, bruised
- 1 tbsp fresh ginger, sliced
- 3 whole garlic cloves, smashed
- 4 oz dried rice noodles
- ¼ cup fresh Thai basil
- ¼ cup fresh mint leaves
- ¼ cup fresh cilantro
- 1 whole lime wedges
- 1 whole red Thai chilies, sliced
- ½ cup bean sprouts
Instructions

Cook rice noodles according to package directions, drain, and set aside.

Bruise lemongrass stalks by pressing with the side of a knife.

In a large pot, heat broth over medium-high heat. Add curry paste and whisk until dissolved.

Add beef slices, lemongrass, ginger, and garlic. Bring to a simmer.

Simmer for 10 minutes until beef is cooked through. Remove lemongrass stalks.

Stir in fish sauce and sugar. Taste and adjust seasoning as needed.

Divide cooked noodles between two bowls.

Pour hot broth and beef over noodles.
