Ingredients

  • 1.5 lbs chicken wings (drumettes + flats)
  • 3 tbsp fish sauce
  • 2 tbsp fresh lime juice
  • 4 cloves garlic, minced
  • 1 tbsp brown sugar
  • ½ tsp Thai red chili powder (or crushed red pepper)

Instructions

  1. 1

Pat wings dry. Mix fish sauce, lime juice, garlic, sugar, and chili powder in a bowl until sugar dissolves.

  2. 2

Heat oil in a large skillet over high heat until it shimmers, about 90 seconds.

  3. 3

Add wings in a single layer. Sear 4 minutes without stirring until bottoms turn golden brown.

  4. 4

Flip wings and cook 3 more minutes until the second side browns and edges char slightly.

  5. 5

Pour the marinade over the wings and toss constantly for 2 minutes until the sauce coats and clings to each piece.

  6. 6

Serve immediately while hot and sticky.
