Ingredients
- 1.5 lbs chicken wings (drumettes + flats)
- 3 tbsp fish sauce
- 2 tbsp fresh lime juice
- 4 cloves garlic, minced
- 1 tbsp brown sugar
- ½ tsp Thai red chili powder (or crushed red pepper)

Pat wings dry. Mix fish sauce, lime juice, garlic, sugar, and chili powder in a bowl until sugar dissolves.

Heat oil in a large skillet over high heat until it shimmers, about 90 seconds.

Add wings in a single layer. Sear 4 minutes without stirring until bottoms turn golden brown.

Flip wings and cook 3 more minutes until the second side browns and edges char slightly.
