Ingredients

  • 3 cups all-purpose flour
  • 1 cup whole milk
  • 1 packet active dry yeast
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 3 tablespoons butter, melted
  • 2 whole eggs
  • 1 pound ground pork
  • ½ medium onion, diced
  • 2 cloves garlic cloves, minced
  • 2 whole jalapeños, finely diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • ¼ cup sour cream
  • 2 tablespoons butter, melted
  • 2 tablespoons sesame seeds

Instructions

    Warm milk to 110°F. Combine yeast, sugar, and warm milk; let sit 5 minutes until foamy.

    Mix flour and salt in large bowl. Make well in center, add yeast mixture, eggs, and melted butter.

    Knead dough 8-10 minutes until smooth and elastic. Place in greased bowl, cover, let rise 1.5 hours until doubled.

    Heat 8-inch skillet over medium-high heat. Brown ground pork, breaking into small pieces, about 5 minutes.

    Add diced onion, garlic, and jalapeños; sauté 3 minutes until softened and fragrant.

    Stir in paprika, cumin, chili powder, salt, and pepper. Cook 1 minute more.

    Remove from heat, fold in shredded cheddar and sour cream. Let cool 10 minutes.

    Preheat oven to 375°F. Punch down dough and divide into 12 equal portions. Roll each into a ball.

    Flatten each ball into 3-inch round. Place 2 tablespoons filling in center, fold edges over, seal gently.
