Ingredients

  • 1.25 lbs beef brisket, thinly sliced (about 1/2 inch)
  • 8 oz frozen onion rings
  • 1.5 cups prepared potato salad
  • 2 ears corn on the cob, husked
  • 1 cup cherry tomatoes, halved
  • 1 tbsp smoked paprika
  • ¼ cup beef broth or water
  • 2 tbsp butter

Instructions

    Start onion rings in the oven at 400°F according to package directions, ~12 minutes.

    Boil corn in salted water for 5 minutes until tender; drain and set aside.

    Pat brisket dry. Season generously with salt, pepper, and smoked paprika on both sides.

    Heat butter in a large skillet over medium-high until sizzling; sear brisket 2 minutes per side without moving.

    Pour broth into the skillet, then cover and reduce heat to medium; simmer 3 minutes until edges curl and meat stays moist.
