Ingredients
- 12 sheets wonton wrappers
- 1 lb chicken breast
- ½ cup teriyaki sauce
- ½ medium cucumber
- 2 stalks green onions
- 1 tbsp sesame seeds
- ¼ cup cilantro
- 1 tbsp cooking spray
Instructions
- 1
Preheat oven to 375°F. Spray a 12-cup muffin tin with cooking spray. Press one wonton wrapper into each cup, pleating edges to form a cup shape.
- 2
Bake wonton cups for 8-10 minutes until golden and crisp. Remove from oven and let cool in the pan while you prepare the chicken.
- 3
Cut the 1 lb chicken breast into small bite-size pieces. Heat a large skillet over medium-high heat and add the chicken. Cook, stirring, until browned and cooked through, about 6-8 minutes.
- 4
Pour the 1/2 cup teriyaki sauce over the cooked chicken. Stir and let simmer for 2-3 minutes until the sauce thickens and coats the chicken.
- 5
Spoon the teriyaki chicken into the wonton cups. Top with diced cucumber, sliced green onions, sesame seeds, and chopped cilantro. Serve warm.
- 6
Optional: add a sprinkle of red pepper flakes for heat if you like.
