Tempura Shrimp and Salmon Wraps

Ingredients
- 12 whole shrimp, peeled and deveined
- 1 cup tempura batter mix
- 1 cup ice water
- 8 oz salmon, sushi-grade, thinly sliced
- 4 sheets nori sheets
- 2 tbsp sriracha
- 3 tbsp mayonnaise
- 2 cup vegetable oil for frying

In a small bowl, mix 3 tbsp mayonnaise and 2 tbsp sriracha until smooth. Set aside.

Heat 2 cups vegetable oil in a deep pot to 350°F (175°C). Meanwhile, whisk 1 cup tempura batter mix with 1 cup ice water until just combined (lumps are fine).

Dip 12 shrimp into the batter, letting excess drip off. Fry in batches without crowding until golden and crispy, about 2-3 minutes per batch. Drain on paper towels.

Cut 4 nori sheets in half. Place a few slices of salmon and one tempura shrimp on each half.

Drizzle with the sriracha mayo, then roll up tightly. Serve immediately with extra sauce for dipping.
