Ingredients
- 8 oz tempeh
- ¼ cup peanut butter
- 2 tbsp soy sauce
- 1 lime
- ¼ cup cilantro
- 2 tbsp vegetable oil

Cut the 8 oz tempeh into 1-inch cubes. In a small bowl, whisk together the 1/4 cup peanut butter, 2 tbsp soy sauce, and juice of half the lime until smooth. If too thick, add 1-2 tbsp water.

Thread the tempeh cubes onto skewers. Heat the 2 tbsp vegetable oil in a large skillet over medium-high heat until shimmering.

Cook the skewers for 8-10 minutes, turning occasionally, until golden brown and crispy on all sides.

Brush the cooked skewers with the peanut sauce and cook for 1 more minute, letting the sauce glaze and bubble slightly.

Serve hot, drizzled with remaining sauce, sprinkled with the 1/4 cup chopped cilantro, and with the remaining lime cut into wedges for squeezing.
