Tan Tan Noodles

Ingredients

  • ½ lb ground pork
  • 2 tbsp soy sauce
  • 2 tbsp chili oil
  • 2 tbsp tahini
  • 8 oz noodles
  • 3 green onions
  • 2 eggs

Instructions

    Bring a pot of water to a boil. Add the 2 eggs and cook for 6-7 minutes for a soft-boiled yolk. Remove and place in ice water to stop cooking.

    In a small bowl, whisk together the 2 tbsp soy sauce, 2 tbsp chili oil, and 2 tbsp tahini until smooth. Set aside.

    Heat a skillet over medium-high heat. Add the 0.5 lb ground pork and cook, breaking it up, until browned and crispy, about 5-7 minutes. Season with a pinch of salt.

    In the same pot of boiling water, cook the 8 oz noodles according to package directions until al dente. Reserve 1/4 cup of pasta water, then drain.

    Toss the hot noodles with the sauce, adding a splash of the reserved pasta water to loosen if needed. The noodles should be well coated and glossy.

    Peel the eggs and slice in half. Divide the noodles between two bowls, top with the crispy pork, egg halves, and sliced green onions. Serve immediately.
