Ingredients

  • 2 cups short-grain white rice
  • 6 oz mushrooms (shiitake or button), sliced
  • 1 medium carrot, diced small
  • 3 tbsp soy sauce
  • 2 tbsp sake or mirin
  • 2.25 cups water
  • 2 tbsp green onion, sliced thin

Instructions

    Rinse rice under cold water, stirring with your hand, until water runs mostly clear, ~1 minute.

    Add rice, mushrooms, carrot, soy sauce, sake, and water to a medium pot with a lid.

    Bring to a boil over medium-high heat, uncovered, ~3 minutes.

    Cover, reduce heat to low, and simmer 18 minutes without lifting the lid.

    Remove from heat and let rest covered for 5 minutes. Steam will finish cooking the rice.

    Fluff with a fork. Taste and adjust soy sauce if needed.

    Transfer to a serving bowl. Scatter green onion over the top and serve hot.
