Ingredients

  • 12 oz white fish fillets (cod, halibut, or sea bass)
  • ⅓ cup tahini
  • 1 whole lemon (juiced + zested)
  • 2 cloves garlic, minced
  • ¼ cup warm water
  • 2 tbsp fresh parsley, chopped

Instructions

    Whisk tahini with lemon juice, minced garlic, and warm water until smooth and pourable. Season with salt and pepper to taste.

    Heat olive oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Pat fish dry. Season both sides with salt and pepper, then place in the skillet without moving.
