Ingredients

  • 1 lb potatoes, diced into 1/2-inch cubes
  • 3 tbsp olive oil
  • 1 to taste salt and pepper
  • 8 count corn or flour tortillas
  • ¼ large white onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 whole lime (for serving)

Instructions

    Heat oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.

    Add diced potatoes. Cook without stirring for 4 minutes until bottoms turn golden.

    Stir the potatoes, breaking up any sticking. Cook 5–6 more minutes until crispy.

    Season generously with salt and pepper. Taste and adjust.

    Warm tortillas in a dry skillet 15–20 seconds per side until pliable.
