Ingredients

  • 8 small (6-inch) corn tortillas
  • 1.5 cups (canned or homemade) refried beans
  • 3 cups vegetable oil for frying
  • ¾ cup queso fresco or crumbled feta
  • 1 cup shredded iceberg lettuce
  • ½ cup diced tomato

Instructions

    Warm refried beans in a small saucepan over medium heat, stirring occasionally, until hot and pliable, ~4 minutes.

    Heat oil in a heavy 3-quart pot to 350°F, or until a tortilla piece sizzles immediately when dropped in.

    Carefully place one tortilla in hot oil. It should puff and soften in 2-3 seconds—do not let it crisp.

    Remove tortilla with tongs and lay flat on paper towels. Repeat with remaining tortillas.

    Spread 2 tablespoons warm refried beans down the center of each tortilla while still warm.

    Top each with cheese, lettuce, and tomato. Fold tortilla in half and serve immediately.
