Ingredients
- 8 small (6-inch) corn tortillas
- 1.5 cups (canned or homemade) refried beans
- 3 cups vegetable oil for frying
- ¾ cup queso fresco or crumbled feta
- 1 cup shredded iceberg lettuce
- ½ cup diced tomato

Warm refried beans in a small saucepan over medium heat, stirring occasionally, until hot and pliable, ~4 minutes.

Heat oil in a heavy 3-quart pot to 350°F, or until a tortilla piece sizzles immediately when dropped in.

Carefully place one tortilla in hot oil. It should puff and soften in 2-3 seconds—do not let it crisp.

Remove tortilla with tongs and lay flat on paper towels. Repeat with remaining tortillas.

Spread 2 tablespoons warm refried beans down the center of each tortilla while still warm.
