Ingredients

  • 1.5 lb lamb, ground
  • ½ medium onion, finely minced
  • ¼ cup fresh parsley, chopped
  • 1.5 tsp cumin
  • ½ tsp allspice
  • 1 to taste salt and black pepper
  • 1 whole lemon, halved

Instructions

    Mix ground lamb, minced onion, parsley, cumin, allspice, salt, and pepper in a bowl until just combined.

    Divide lamb mixture into 8 portions. Pack each firmly onto a metal skewer, forming a long cylinder.

    Preheat grill or grill pan to medium-high heat, ~2 minutes until smoking lightly.

    Lay skewers directly on grill grates. Cook 3 minutes without moving until edges char.

    Rotate kebabs 90 degrees. Cook 2 minutes until charred and instant-read thermometer hits 160°F.
