Ingredients

  • 1.25 lb ground lamb
  • ½ large onion, finely minced
  • ⅓ cup fresh parsley, chopped
  • 1.5 tsp ground cumin
  • ½ tsp ground cinnamon
  • 1 pinch salt and black pepper to taste
  • 1 whole lemon, cut into wedges

Instructions

    Mix lamb, minced onion, parsley, cumin, cinnamon, salt, and pepper in a bowl until just combined.

    Divide mixture into 8 equal portions. Mold each tightly onto a flat metal skewer, pressing firmly.

    Heat a grill or cast-iron skillet over medium-high heat until very hot, about 2 minutes.

    Grill or sear kababs 3–4 minutes per side without moving, until surface is browned and meat is cooked through.

    Transfer kababs to a plate. Squeeze lemon wedges over the top and serve immediately.
