Ingredients
- 4 slices white bread, sliced thick (1-inch slices)
- 200 g gruyère cheese, sliced thin
- 3 tbsp butter
- 2 tsp dijon mustard
- 50 g ham or prosciutto, sliced thin
- 2 sprigs fresh thyme sprigs

Spread one side of each bread slice with a thin layer of Dijon mustard.

Layer 2 slices of gruyère, a pinch of ham, and thyme on 2 bread slices. Top each with a second bread slice, mustard-side down.

Heat 1.5 tbsp butter in a large skillet over medium-high until foaming, about 90 seconds.

Lay one sandwich in the pan and cook 2–3 minutes until golden brown and starting to crisp.

Flip, add remaining 1.5 tbsp butter to the pan, and cook the second side 2–3 minutes until golden and cheese melts.

Transfer to a plate. Repeat with the second sandwich. Serve immediately while cheese is still oozing.
