Ingredients
- 1 cup short-grain rice
- 1.25 cups water
- 1 medium sweet potato
- 1 tbsp soy sauce
- 1 tbsp mirin
- ¼ tsp salt

Rinse the 1 cup rice in cold water until the water runs clear, then drain well.

Peel the sweet potato and cut it into 1/2 inch cubes.

In a rice cooker or pot, combine the rice, 1.25 cups water, sweet potato, 1 tbsp soy sauce, 1 tbsp mirin, and 0.25 tsp salt. Stir gently.

Cook according to your rice cooker setting, or bring to a boil, cover, reduce heat to low, and simmer for 15 minutes until the liquid is absorbed and the rice is tender.
