Ingredients

  • 15 oz sweet potato, cooked (canned or roasted)
  • ½ cup heavy cream
  • ¼ cup brown sugar
  • ½ tsp vanilla extract
  • 1 tsp cinnamon, nutmeg, and ginger (mixed spice)
  • 12 cups phyllo cups (mini, store-bought)
  • 2 tbsp butter, melted (for brushing)

Instructions

    Combine sweet potato, cream, brown sugar, vanilla, and spice in a blender. Pulse until smooth and creamy, ~60 seconds.
