Ingredients
- 1.5 pounds sweet potato
- 1 cup all-purpose flour
- 1 large egg
- ½ cup milk
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 tablespoons vegetable oil

Peel the 1.5 pounds sweet potato and cut into 1 inch chunks. Boil in salted water until fork-tender, about 15 minutes. Drain well and mash until smooth.

In a large bowl, whisk together the 1 cup flour, 2 tablespoons sugar, 1 teaspoon baking powder, and 0.5 teaspoon salt.

Add the mashed sweet potato, 1 egg, and 0.5 cup milk to the dry ingredients. Stir until just combined; the batter will be thick and slightly lumpy.

Heat 1 tablespoon of the vegetable oil in a large nonstick skillet over medium heat. Drop 1/4 cupfuls of batter into the skillet, flattening slightly with a spatula.

Cook until bubbles form on the surface and the edges look set, about 3 minutes. Flip and cook until golden brown on the other side, another 2-3 minutes.
