Sweet Lentil Flatbread

Ingredients
- 1.5 cups all-purpose flour
- ½ cup water
- 1 cup cooked lentils
- ½ cup jaggery or brown sugar
- ½ teaspoon cardamom powder
- 2 tablespoons ghee or oil

In a bowl, mix 1.5 cups flour and 0.5 cup water until a soft dough forms. Knead for 2 minutes, then cover and set aside.

In another bowl, mash 1 cup cooked lentils with 0.5 cup jaggery and 0.5 teaspoon cardamom until smooth. If too dry, add a splash of water.

Divide dough into 4 balls. Roll each into a 5 inch circle, place a quarter of the lentil filling in the center, and fold edges over to seal.

Roll each filled ball gently into a 7 inch flatbread. Heat a skillet over medium and cook each flatbread with 0.5 tablespoon ghee until golden spots appear, about 2 minutes per side.

Serve warm, drizzled with extra ghee if desired.
