Ingredients

  • 1 lb ground beef
  • 6 cups beef broth
  • ½ cup sour cream
  • 2 tbsp Dijon mustard
  • 1 whole egg
  • 2 tbsp fresh dill

Instructions

    Mix ground beef with egg, salt, and pepper. Roll into 16–20 meatballs, about walnut-sized.

    Heat broth in a large pot over medium-high until it simmers, about 4 minutes.

    Gently drop meatballs into broth and simmer 8–10 minutes until cooked through.

    Whisk sour cream and Dijon together, then stir into soup off heat so cream doesn't break.

    Fold in fresh dill, season with salt and pepper to taste.
