Ingredients
- ¾ cup whole milk, warmed
- 2.25 tsp instant yeast
- 3 cups all-purpose flour
- 4 tbsp butter, softened
- 2 tbsp sugar
- ½ tsp salt
- 10 pods cardamom pods, crushed and seeds removed
- ½ cup brown sugar
- 3 tbsp butter, melted
- 2 tbsp pearl sugar (nyponsoppa or coarse sanding sugar)

Combine warm milk, yeast, and 1 tbsp sugar in a bowl. Let sit 5 minutes until foamy.

Mix flour and salt in a large bowl. Make a well and pour in yeast mixture.

Add softened butter and 2 tbsp sugar. Mix until shaggy, then knead 8–10 minutes until smooth and elastic.

Form dough into a ball. Cover with a damp towel and let rise in a warm place for 1 hour until doubled.

Crush cardamom pods, remove seeds, and grind finely. Mix with brown sugar.

Turn dough onto a lightly floured surface. Roll into a 12×8-inch rectangle.

Brush dough with melted butter, then sprinkle cardamom-sugar mixture evenly over the surface.

Roll tightly from one long side into a log. Cut into 12 equal pieces.

Place rolls on a parchment-lined baking sheet. Cover and let rise 45 minutes until puffy.

Preheat oven to 375°F. Brush rolls with a bit more melted butter.

Sprinkle pearl sugar over each roll. Bake 15–18 minutes until golden brown.
