Ingredients
- 1 lb beef sirloin steak
- 1 lb baby potatoes
- 8 oz cremini mushrooms
- 1 cup beef gravy
- 2 tbsp olive oil
- 1 pinch salt and pepper

Slice the 1 lb beef sirloin steak against the grain into 1/2 inch thick strips. Pat dry with paper towels and season generously with salt and pepper.

Heat 1 tbsp olive oil in a large skillet over high heat. Add the beef in a single layer and sear until browned on both sides, about 4 minutes total. Transfer to a plate and set aside.

Reduce heat to medium and add the remaining 1 tbsp olive oil. Add the 1 lb baby potatoes (halved if large) and cook, stirring occasionally, until golden and tender, about 10 minutes. Add the 8 oz sliced mushrooms and cook until softened, about 3 minutes.

Pour in the 1 cup beef gravy and bring to a simmer. Return the beef to the skillet and cook until heated through, about 2 minutes. Serve hot.
