Ingredients
- 1 lb mung bean sprouts, fresh
- 3 cloves garlic cloves
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- ½ tsp salt
- 1 tbsp sesame seeds
- 1 tbsp olive oil or neutral oil
Instructions
- 1
Fill a large pot with water until it reaches 3 inches from the top and bring to a boil over high heat, about 5 minutes, until you see large rolling bubbles.
- 2
Place the mung bean sprouts in a colander or large strainer and rinse under cool running water until the water runs clear, about 30 seconds.
- 3
Mince the garlic cloves until the pieces are smaller than a grain of rice—about the size of pencil-tip dots.
- 4
Carefully pour the rinsed mung bean sprouts into the boiling water and stir once with a wooden spoon to submerge them evenly.
- 5
After 2 minutes of boiling, the sprouts will turn bright green and become tender; drain them in the colander and shake gently to remove excess water.
- 6
Transfer the drained sprouts to a large mixing bowl and spread them out so they cool quickly, about 2 minutes.
- 7
Heat 1 tablespoon of olive oil in a small skillet over medium-high heat until it shimmers and slides quickly when you tilt the pan, about 45 seconds.
- 8
Add the minced garlic to the hot oil and stir constantly for 30 seconds until the kitchen smells fragrant and the garlic looks slightly golden.
- 9
Pour the garlic and oil into the bowl of cooled sprouts.
- 10
Add 2 tablespoons soy sauce and 1 tablespoon sesame oil to the bowl.
- 11
Sprinkle 0.5 teaspoon salt over the mixture.
- 12
Toss everything together gently with your hands or two forks until every sprout is coated evenly, about 1 minute.
- 13
Transfer to a serving plate and scatter 1 tablespoon sesame seeds on top immediately.
