Ingredients

  • ½ lb ground beef
  • 1 cup cooked rice
  • ¾ cup shredded cheddar cheese
  • 2 whole bell peppers, halved and seeded
  • 1 whole poblano or green chili pepper
  • ½ cup diced tomato (fresh or canned)

Instructions

    Heat oil in a skillet over medium-high. Brown ground beef, breaking it up with a spoon, until no pink remains, about 4 minutes.

    Stir cooked rice, half the cheese, diced tomato, salt, and pepper into the beef. Mix until combined, about 1 minute.

    Spoon filling into bell pepper halves. Arrange on a sheet pan alongside the poblano. Drizzle everything with oil.

    Broil 6 inches from heat until peppers char at the edges and filling is hot, 8–10 minutes.

    Scatter remaining cheese over stuffed peppers. Broil 1 more minute until melted.

    Serve stuffed peppers warm with the charred poblano on the side.
