Ingredients
- ½ lb ground beef
- 1 cup cooked rice
- ¾ cup shredded cheddar cheese
- 2 whole bell peppers, halved and seeded
- 1 whole poblano or green chili pepper
- ½ cup diced tomato (fresh or canned)

Heat oil in a skillet over medium-high. Brown ground beef, breaking it up with a spoon, until no pink remains, about 4 minutes.

Stir cooked rice, half the cheese, diced tomato, salt, and pepper into the beef. Mix until combined, about 1 minute.

Spoon filling into bell pepper halves. Arrange on a sheet pan alongside the poblano. Drizzle everything with oil.

Broil 6 inches from heat until peppers char at the edges and filling is hot, 8–10 minutes.

Scatter remaining cheese over stuffed peppers. Broil 1 more minute until melted.
