Ingredients

  • 5 cups fresh spinach
  • 8 oz strawberries, hulled
  • ½ cup sliced almonds
  • 2 tbsp honey
  • 1 tbsp poppy seeds
  • 3 tbsp red wine vinegar
  • 6 tbsp olive oil
  • to taste salt and pepper

Instructions

    Toast almonds in a dry skillet over medium heat, shaking occasionally, until fragrant, 4–5 minutes.

    Drizzle honey over warm almonds, toss to coat, then spread on a plate to cool.

    Whisk together vinegar, poppy seeds, and olive oil in a small bowl until smooth.

    Slice strawberries into halves or thirds, depending on size.

    Place spinach in a large bowl, pour dressing over, and toss until evenly coated.
