Ingredients

  • 1.25 lbs fresh strawberries, hulled
  • ⅓ cup granulated sugar
  • 1.5 cups heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • ⅛ tsp salt

    Chop strawberries into rough 1-inch pieces; reserve 4 whole berries for garnish.

    Purée chopped strawberries with sugar and lemon juice until smooth, ~90 seconds.

    Pour purée through a fine-mesh sieve into a bowl, pressing gently to remove seeds.

    Whip heavy cream with vanilla and salt until stiff peaks form, 2–3 minutes.

    Fold strawberry purée into whipped cream with a spatula until no white streaks remain.

    Divide mousse evenly among 4 glasses or bowls.

    Chill at least 2 hours, or until set and ready to serve.

    Top each serving with a reserved strawberry just before serving.
