Ingredients

  • 2 lbs pork spare ribs, cut into 2-inch pieces
  • ⅓ cup soy sauce
  • ¼ cup granulated sugar
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 tbsp neutral cooking oil

Instructions

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Add ribs in a single layer and sear 3 minutes per side until the surface is golden brown, working in batches if needed.

    Pour off excess fat from the skillet, leaving the ribs inside.

    Stir in soy sauce, sugar, vinegar, ginger, and garlic until combined and the sugar dissolves.

    Reduce heat to medium and simmer, stirring occasionally, until the liquid darkens and coats the ribs thickly, 8–10 minutes.
