Ingredients
- 1 block (about 14 oz) silken tofu
- 2 large eggs
- ¼ lb ground pork
- 2 stalks green onions
- 1 tbsp soy sauce
- 1 tsp vegetable oil

Drain the 1 block silken tofu and cut it into 1-inch cubes. Place the cubes in a shallow heatproof dish that fits in your steamer.

In a bowl, beat the 2 eggs with 1/4 cup water and 1/2 tbsp soy sauce. Pour the egg mixture over the tofu, gently nudging the cubes so they are mostly submerged.

Set up a steamer with water and bring to a boil. Place the dish in the steamer, cover, and steam over medium-high heat until the egg is just set but still jiggly, about 12 minutes.

While the egg steams, heat the 1 tsp vegetable oil in a small skillet over medium-high. Add the 1/4 lb ground pork and cook, breaking it up, until browned and cooked through, about 4 minutes. Stir in the remaining 1/2 tbsp soy sauce and remove from heat.

When the egg custard is done, spoon the cooked pork over the top. Slice the 2 green onions thinly and scatter over the dish. Serve hot.
