Ingredients

  • 1.5 cups all-purpose flour
  • ¾ cup boiling water
  • ½ lb ground pork
  • 1 tbsp fresh ginger, minced
  • 2 tbsp soy sauce
  • 2 tbsp scallion, thinly sliced
  • ½ tbsp sesame oil

Instructions

    Pour boiling water over flour in a bowl, stir with chopsticks until shaggy dough forms, then knead until smooth.

    While dough rests, brown ground pork in a skillet over medium-high heat, breaking it up with a spoon, ~5 min.

    Stir in ginger and cook 30 seconds until fragrant, then add soy sauce, scallion, and sesame oil.

    Divide dough into 8 pieces, roll each into a thin disc, and spoon filling into the center of each.

    Fold disc edges over filling and pinch to seal, then place seam-side down in parchment-lined bamboo or metal steamer.

    Steam over simmering water for 8 minutes until buns are puffy and cooked through.
