- 2 lb mussels, scrubbed and debearded
- ¾ cup dry white wine
- 3 cloves garlic, minced
- 1 lemon, juiced
- 2 tbsp olive oil
- ¼ cup fresh parsley, chopped

In a large pot with a lid, heat the 2 tbsp olive oil over medium heat. Add the 3 minced garlic cloves and cook until fragrant, about 1 minute, without browning.

Pour in the 0.75 cup white wine and 1 lemon juice. Bring to a simmer over medium-high heat.

Add the 2 lb mussels to the pot, cover, and steam until the mussels open, about 5-7 minutes. Shake the pot occasionally to help them cook evenly.

Discard any mussels that remain closed. Sprinkle with the 0.25 cup chopped parsley and serve immediately with crusty bread for dipping.
