Ingredients
- 1 lb grouper fillets
- 2 tbsp minced fresh ginger
- 4 whole scallions, divided
- 3 tbsp soy sauce
- 3 tbsp neutral oil
- 1 tsp sesame oil

Set up a steamer: fill a pot with 1 inch water, place a steamer basket or bamboo steamer on top, and bring water to a rolling boil.

Pat grouper fillets dry with paper towels. Arrange on a heatproof plate, season lightly with salt and pepper.

Slice 2 scallions into thin rings; set aside for garnish. Chop the remaining 2 scallions into 1-inch pieces.

Slide the plate of grouper into the steamer. Cover and steam for 6–8 minutes until fish flakes easily at the thickest part.

Heat neutral oil in a small skillet over medium-high for 90 seconds until it shimmers. Add ginger and chopped scallions, stir for 30 seconds until fragrant.

Remove from heat. Stir in soy sauce and sesame oil. Pour the ginger-scallion oil over the steamed grouper and garnish with sliced scallions. Serve immediately.
