- 1 lb frozen french fries
- 4 tbsp butter
- 2 large egg yolks
- 2 tbsp white wine vinegar
- 1 tbsp fresh tarragon

Cook the 1 lb frozen french fries according to package directions until golden and crisp, about 15-20 minutes in a 425°F oven or air fryer.

While fries cook, make the béarnaise: melt 4 tbsp butter in a small saucepan over low heat. In a blender, blend 2 egg yolks, 2 tbsp white wine vinegar, and 1 tbsp chopped tarragon until smooth.

With blender running, slowly drizzle in the hot melted butter until the sauce thickens and becomes creamy, about 1-2 minutes. Season with salt and pepper.

Season the 1 lb steak generously with salt and pepper. Heat a cast-iron skillet over high heat until smoking, then add the steak and cook 3-4 minutes per side for medium-rare, or until it reaches your desired doneness.
